A Texas Breakfast

As I have mentioned many times on the blog Andrew and I cook a lot at home. As much as we love going to brunch or out to dinner it just isn’t the healthiest and we are both eating a lot healthier these days. One of our favorite things to make is a Texas breakfast. Today I am teaming up with Lone Star Eggs to share our favorite Texas breakfast with you. I also wanted to share a little about why I love living in Texas.

What you will need:

One carton of Lone Star Eggs

Anything you want with the eggs(we use a little milk, salt, pepper, olive oil and a bit of shredded spinach)

Salsa of your choice(our favorite is Native Texan Salsa)

Some cheese of choice (our favorite is Horizon shredded)

Sandwich thin

This breakfast is very easy and does not take long to make. First make some easy scrambled eggs. I personally love to make egg whites mixed with a whole egg. I added a dash of milk, some salt and pepper and a little spinach.

Then sprinkle the top of the cooked eggs with some Mexican cheese and add a little bit of salsa on top! It’s like a Fiesta on your plate! The sandwich thin is great on the side or have it all together as a healthy breakfast sandwich.

We enjoyed this breakfast on our patio on a beautiful Texas summer morning looking out on our backyard. That’s the great thing about living in Texas. The end of summer days may be really hot but the mornings are gorgeous! I realize you can do this almost anywhere but there is just something special about a Texas summer morning that makes me realize how lucky I am to live here.

    Yummy. My favorite thing about where I live is that we are on the ocean where the redwoods meet the sea and its a coastal sanctuary where all the wildlife is protected.

    We eat a lot of eggs at our house, too. Our girls often request “brinner” and we happily oblige. Sometimes we wrap the eggs/cheese/salsa mixture into a tortilla to make it seem a little more dinner-y 🙂

  9. Dear heavens, this sounds gloriously delish! Jamie and I love experimenting with great egg recipes…today for brunch we made wraps with whole wheat tortillas, egg, avocado, cheddar cheese, diced tomatoes, and a dollop of Hot salsa! SO yum!

    Oops, I think you forgot to upload a pic of the final breakfast! And I have a question, what is a sandwich thin? Is that bread? I cook a lot of eggs and always look for new ways to mix things up, but I’m having a hard time trying to figure out how this all gets assembled!
