So last Monday night I was coming home for dinner and starving and I didnt want to wait for something to be fixed. So I threw together a salad which ended up being amazing and super healthy.
What was in it:
Mixed baby greens
green beans
carrots
hard boiled egg whites(which I make on Sundays for the week)
healthy chicken tenders(3 of them)
a bit of feta cheese
balsamic vinaigrette dressing
on the side I had a slice of whole wheat sourdough bread
I also had some Alexia oven fries(sweet potato)
Let me tell you that this dinner took all of 10 minutes aside from the fries which cook for 22 in the oven.
I had everything on hand and I always do.
This is a great dinner to make for just me especially on a night where I dont want any fuss

I am the pickiest eater on the planet! Too picky for that salad. I don’t like salads in the winter!
