Healthy Dinner Favorites: Healthy Chicken Nachos

We all know that when it comes to what to eat for dinner it can be tough to be original and stay healthy. I know for Andrew and I we get in major ruts where we eat the same thing constantly and don’t branch out. There is a place we go to eat that has these amazing healthy nachos and I figured I could re create them. If you know me you know I do not cook. That’s Andrews domain. But this is something I felt pretty confident doing. I did sub some of their ingredients for healthier ones.

Healthy Chicken Nachos:

Ingredients:

Black Bean Hummus- 1 Container

Kraft finely shredded 2% milk cheddar cheese

Simply Balanced Blue Corn Chips with Flax Seed(any blue corn chips will work)

Boneless Skinless Chicken Breast

Fajita seasoning

Salsa

 

 

Steps:

1. Preheat the oven on Broil and let it get very hot, while you are doing this start grilling 1-2 chicken breasts make sure to season with fajita seasoning

2. Take a cookie sheet and cover in foil(easy clean up!)

3. Lay out Blue Corn Chips as many as will fit on the cookie sheet

4. Spread Black Bean Hummus generously on each chip

5. Sprinkle cheese all over the chips

6. Place in oven but watch closely they cook fast.

7. Cook until cheese is melted

8. Take cooked chicken breasts and shred them into very small pieces

9. After you have taken the nachos out of the over put chicken on each nacho

10. Grab some salsa if you like and enjoy!

 

Prep Time: 10 Minutes

Cook time: 15 minutes
